Alligator Sausage

I was in New Orleans, Louisiana this last weekend for An Event Apart, pretty much the premiere conference for designer/front end developers like me. It was so much fun, and even though I was only there for 3 nights, I had a huge list of things that I wanted to eat, including gumbo, crawfish, alligator, po-boys etc. I was hoping to get into some fancy restaurants as well, but due to Jazz Fest which was starting on friday, pretty much everywhere was booked solid every night.

Not to be deterred by that, I started checking out the mom and pop eateries throughout the French Quarter. One place had such interesting items on the menu, I had to come back twice. It’s called Yo-Mama’s (believe it or not). It came highly reccomended by a gentleman who served me a po-boy at 3am the night before. Walking in I could not help but notice a sign for gator sausage above the bar.

I can’t say that I have a good understanding of the flavor of alligator now (the sausage was so heavily spiced), but I can say it was certainly delicious. It reminded me of kielbasa in flavor, and grilled to perfection, had a very similar texture as well. The casing had that perfect crunch to it, and the inside was tender. It was served with a spicy honey mustard dipping sauce.

  1. I hope you had a beignet whilst you were there. They were brilliant!

    …and maybe some greens, those were out of this world, I got mine at Mothers, which in my opinion served the best po’boy ever!
