Hiyayakko

What better treat could you have on a hot day than cold silky tofu? My friend Koichi-san prepared this hiyayakko for me. It consists of cold silken tofu (I prefer the individually packaged kind since it has such a good shape), negi (green onion), grated ginger and shoyu. It’s so simple, but so amazing. When I prepare this myself, I like to use a shiso dressing instead of shoyu.
