Kubo-chan ramen
I found out about the soft opening of a new dish at Moko Moko bar in Manhattan. From this week they will serve ramen. Here is an exceprt from the invite:
“Mr. Kubo is a ordinary “salary-man” works for a company in NYC. He loves Ramen sooo much and he has been studying how to make Ramen over 10 years. He even took Ramen boot camp which was offered by a Ramen noodle company in Shikoku island.”
I would really like to learn how to make noodles, and the broth, so I was particularly interested to see what a “salary-man” could come up with. 1/2 size bowls of shoyu and shio ramen were served. I would give his cha-shu a 9, broth a 7 and noodles a 6. All in all not a shabby bowl of ramen. I don’t think he is going to take a chunk of business from Ippudo, but it’s inspirational none the less.
















Looking at the photos, I thought you made them home.
It’s really hard to believe that a Japanese chose this “not-so-Japanese-looking bowl” for Ramen business even if it’s plastic to go.
Oh, that was just for the party, so that many people could try it. It was only 1/4 bowls of ramen. I think they will have a real bowl starting today.

Upload your photo »After a brief life as Village Bistro East, all traces of longtime Alphabet City standby Les Gamin are gone, replaced by a ramen spot helmed by businessman-turned-noodleman Hiroshi Kubo. Kubo first tested the (broth-flavored) waters with a pop-up shop within Moco Global Dining, but now he’s turning out steaming bowls from a permanent space. That space just happens to be right next door to local favorite Monica, and only time will tell whether East 5th St. is big enough for the both of them. In addition to both miso and shoyu (soy sauce) Ramen, Kubo and his partner Mike Kida are offering Japanese small plates like chicken wings, pork buns and homemade shrimp gyoza. So long crepes and frites, hello ramen wars?
