Mabo dofu
Mabo tufu is a a Chinese dish that has been adapted to the Japanese tongue. I really like it because it uses tofu in a way that we often do not use in western culture, as a compliment to meat. It’s meat, tofu and spices over rice.

Why do so many people pour Mabo-dofu over rice?

I love Mabo-dofu “with” rice. Not “over” rice.
You know, I don’t see it on the menu often, but I’m attracted to Mabo Ramen.
