Not tacos

You may have noticed that I have been eating some raw food and vegan / vegetarian dishes lately. I have decided to incorporate more of that into my diet, but continue to eat all the fish and meat that I love. I actually believe this is the way our bodies were supposed to be fed. Everything in moderation…

Anyway, I have been searching the web for vegan and raw food recipes to try and I found this one for “crunchy tacos“. It has cumin in it, which is such an intense flavor, I figured it could make anything taste like tacos, so I gave it a try. I’m not even going to post pics of it on the romaine lettuce, which made it crunchy, as they did not look very exciting (or different than the tofu salad shots I posted earlier this week).

If I had not eaten tacos in 10 years, and tried this, it still would not pass as a taco. But, like many of the vegan and raw food dishes I try, it was pretty good, and stands on its own. I think it makes a really good healthy dip. If I were going to suggest how this could be made more into a taco feel, I would suggest to dehydrate it 1/2 way, crumble it and saute it, which would lose the raw food tag. A real tortilla would do wonders too.

Crunchy Taco

3 ripe avocados
1 lg. onion
1/4 cup fresh lemon juice
1/4 cup fresh parsley, chopped
1 1/2 tsp cumin
2 cloves garlic, chopped
1 cup sun dried tomatoes, soaked and chopped
2-3 chopped jalapenos
1 1/2 tsp sea salt
romaine or leaf lettuce

Cut the avocado into chunks, and pour lemon juice over it. Chop onion in food processor, then add the rest of the ingredients and process untill smooth and creamy. Spoon some of the mixture into a lettuce leaf and wrap around mixture.
