Sushi night (flying solo)

Usually in our weekly sushi night, Ume-san does all the cooking, and I assist a little bit. Starting this week, I will be taking over, in an effort to learn how to make sushi. I did everything from marinating and de-boning the saba to making the rice, and coming up with the appetizers (off the cuff, I might add). I’m just a beginner, so go easy on me, presentation-wise.

I was still soaking the rice (had not even started to cook it yet) when Ume-san arrived, so I wanted to give him and his wife something to eat while they waited. I had not planned any appetizers, but looking through my fridge, I found some oyster mushrooms. I sauteed them with garlic and yakiniku sauce, then put a chiffonade of shiso on top. It turned out fantastic. I also had this beautiful yamato imo, which I put in a shiso dressing, and topped with some negi. Going down from there we have saba sashimi and nigiri, as well as unagi nigiri and unagi-takuan maki. Not so bad for my first official sushi dinner.

  3. @Higiri: Give me some more time to learn, and I’ll cook for you! Starting last week, I will be the cook for sushi night :)

    @TaShin: I still have a long way to go, but I have been practicing a lot with saba. I get shio saba (pre-salted), then soak it in my vinegar (which I have reused like 20+ times now, so it’s getting better), and then de-bone and remove skin. It was only like $2.50 for that piece pictured above.

    Not as good as yours saba is, but not too bad for doing it at home!
